Cauliflower Gratin

Ingredients:

7 cups fresh cauliflower florets

1 1/2 TBSP. Mustard

1/2 cup bacon (diced and cooked)

2 1/2 cups half and half

1/2 cup red quinoa, cooked

1 cup Parmesan cheese

1/4 cup butter

1/4 cup flour

1/4 cup shallots

2 jalapenos, seeds removed and sliced into rings

How to Make It:

  1. Preheat oven to 400°F.

  2. Roast the cauliflower florets for 30 minutes until slightly brown.

  3. In a medium pot, melt the butter, add shallots and cook for 3 minutes. Add the flour and cook for another 3 minutes (you are making a roux).

  4. Add the half and half a little at a time, add the mustard and mix with the whisk. Add salt and pepper and cook for 5 minutes.

  5. Add the cheeses, little by little, to the into the half and half mixture.

  6. In a large bowl combine the cheese sauce, bacon, jalapenos, quinoa, and cauliflower.

  7. Transfer the mixture into a baking dish and bake for 30 minutes.
